The Japanese amberjack AKA yellowtail, is a fish in the family Carangidae. It is native to the northwest Pacific, from Japan to Hawaii.Yellowtail is also known as hamachi or buri. They are also eaten cooked and are a seasonal favorite in the colder months when the meat has higher fat content.
