The Japanese amberjack AKA yellowtail, is a fish in the family Carangidae. It is native to the northwest Pacific, from Japan to Hawaii.
Yellowtail is also known as hamachi or buri. They are also eaten cooked and are a seasonal favorite in the colder months when the meat has higher fat content.
